Buckwheat Banana Waffles

2 cups WILD GROATS™ organic buckwheat groats (blended finely into flour)
2 cups plant based milk (unsweetened)
1 tablespoon apple cider vinegar
¼ cup mashed banana
1 tablespoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt
3 tablespoons maple syrup
2 tablespoons coconut oil (melted)
2 teaspoons vanilla extract (optional)

Instructions

Add the plant-based milk and apple cider vinegar to a bowl. Then set it aside for 10 minutes.
In a larger separate bowl, whisk together the buckwheat flour, baking powder, cinnamon, and salt until well combined.
In a small separate bowl, mash 1 banana with a fork, then measure out 1/4 cup. *If you're not feeling banana, you can sub for applesauce.
Add the mashed banana, maple syrup, melted coconut oil, and vanilla (optional) to the dry bowl mixture.
Add the plant-based milk + apple cider vinegar to the dry mixture as well. Stir well to combine all ingredients and achieve a smoother waffle batter.
Preheat your waffle maker to your desired settings. (I use medium heat for a fluffy yet slightly crisp waffle).
Optional: Depending on your waffle maker, spray or add a little coconut oil to prevent sticking.
Once preheating is complete, use a ladle or measuring cup to scoop out the batter and pour it into the middle of the waffle maker. You may need an extra scoop to fill it out, but make sure not to overfill as it will overflow!
Close waffle maker and let cook until the steam has completely stopped (or when it signals that it's done).
If not serving right away, remove each waffle and place on a baking sheet in your oven at 200° F to keep warm and crispy until finished with the entire batter.
Serve with your desired toppings. We love adding sliced bananas, strawberries, blueberries, plant-based butter, a drizzle of maple syrup, and maybe even some whip cream!
