This is a lighter, healthier alternative to fried rice and a twist on the classic Thai dish. It's great as a side dish or a meal by itself. Grain-free and gluten-free, it's a complete protein meal packed with veggies. You can add optional protein to this dish, too (i.e., fried tofu, tempeh, etc).
